Hail Caesar! The creamy Caesar Salad turns 100 today. This legendary medley of romaine lettuce, croutons, and other key ingredients was invented by Italian immigrant Caesar Cardini on July 4, 1924, at his restaurant, Caesar's Place, in Tijuana, Mexico. Cardini concocted this dish on a steamy night while struggling to feed an influx of Californians who had crossed the border to escape Prohibition. Using ingredients he had on hand, including garlic-flavored oil, Worcestershire sauce, lemons, eggs, and Parmesan cheese, Cardini tossed whole Romaine leaves in the middle of the dining room. A star was born.
About 35 percent of restaurants in the USA have a Caesar's Salad on the menu, and 150 million bottles of Caesar's Salad Dressing are sold to consumers there a year. In the early days, It was prepared table side, making it a lot more spectacular. The recipe for the Caesar's Salad did not make it in to mainstream cookbooks, like the Joy of Cooking until 1951.
